Happy Birthday to my sister today!
Due to the awesomeness of it being her birthday, my mother, sister, and I all went out to eat at a local Richmond restaurant – Parkside Cafe.
It was my first time eating there, and I couldn’t find an online menu, so I was going in blind. The menu seemed to be a mixture of various cuisines all thrown together. There were the southern staples: fried green tomatoes, collard greens, bacon. But then there were several Latin-American influenced dishes: Huevos Rancheros, Chicken Chilaquiles, etc. And there were even standard American lunchy items: Chicken caesar, Roasted Beets Salad, etc.
I chose the Tofu Noodle Bowl with Baby Bok Choy and Grilled Eggplant in a Ponzu broth. Sounds delicious, right? The only problem was that the waitress came back and informed me that they were out of Soba Noodles (.:gasp:.) So I asked for a bit of rice with it instead. I forgot my camera, so there are no pictures. But all-in-all my food was just so-so. Nothing spectacular. My sister got the Huevos Rancheros (fried beans stacked with fried corn tortillas and topped with 3 fried sunny-side up eggs with ranchero sauce) , which looked like a much better bet. I think the restaurant specializes more in their greasier menu items.
The dessert, though was a real treat. (I’m still basking in the glow of my sugar coma) My sister got the banana beignets served with ice cream
These were really yummy! My mother chose the Chocolate Pecan Pie. So rich, so delicious. And I chose the Berry Crisp topped with a creamy lemon zabaglione (which after a quick search appears to be eggs, sugar, sweet wine, & lemon). It was served in a dish the size of the above bowl. Everything was so rich and so delicious. I was so full but I pushed on through. After all, I am a proud member of the clean-plate club.
So that being said, today is my rest day from the gym haha

M – 20 Minute HIIT on Stepmill
Tu – TRX Circuit Strength Training
W – 45 minute Cycle class
Th – 60 minute Hatha Yoga (morning) + 60 minute Boot Camp (evening)
F – 45 minute Cycle class
Sa – Circuit Strength Training
Verdict: This week was probably 100% what I want to see in my TWIWs –> 1 + sessions where I did HIIT, 3 days of Strength Training, a high intensity Boot Camp class. My goal this week is to only do Cycle one day and to use the other day to trying something awesome. I’ve been thinking about buying (or finding an old) one piece bathing suit and swimming laps. We shall see.
