Hello? Is anybody in there?

Clearly I have not been here for quite some time. But despite the time lapse, I am indeed still alive. Thriving in fact. Since I last posted:

1 – I’ve moved out of my parents house (YAYYYY!)

… I’m sure that more happened but I can’t think of it now. And I’m too lazy to try haha

So today was a day off, and like most days off I started it out right with a warm breakfast and a work out

Warm breakfast:

This was sooo good that it took all of my power to walk away from it and find my camera so I could document it for all you (non-existent) readers.

Ingredients:

1/4 cup Trader Joe’s Quick Steel Cut Oats
1/2 cup skim milk
1/4 cup water
1/4 cup canned pumpkin
2 T peanut flour (trader joe’s)
cinnamon, nutmeg, ginger, cloves
Directions:
Bring milk and water to a boil. Add oats. Reduce heat and cover (but leave a little vent because it tends to boil out) for 5-7 minutes. Cover and remove from heat for 1 minute.
While your oats are cooking up, combine the pumpkin, peanut flour, and spices in the bowl you intend to eat out of.
Add the oats to the pumpkin mixture and voila! You have a delicious, filling, nutritious breakfast.
Pre-workout ritual:
(coffee and a magazine to go please)
My workout today was a bit shorter than I intended. My goal: 30 minutes on the elliptical and a Power Yoga class. Of course, I ended up being a bit behind schedule so I could only fit in 20 minutes before the class. And unfortunately Power Yoga wasn’t as “power” today. The instructor spent a lot of time on form and alignment rather than working our bodies, but I suppose that it was beneficial to my practice in the long run.
After such a great start to my day, I got the urge to get a haircut! That’s typically how I decide to get my haircut. I’ll wake up one day and BOOM I’ll think “I just have to get my haircut today!” Such an incident happened today, so I called up my usual hair dresser. Unfortunately, today was her off day and I was too impatient to actually wait, so I called a different salon that I had been wanting to try. And I am oh so glad that I did! I love my hair, and it was such a wonderful outing or the day!
After the haircutting business, I got a salad from Martin’s and headed back to my house. I decided that I was still wanting something to eat, so I made my famous chocolate-cereal yogurt concoction and ate and apple. And then a ginger chew.
The next uber-exciting thing that I did today was set up out antennae for TV! It was confusing at times, but I managed to correctly get my antennae hooked up and scan for the correct channels.
I don’t think I’ll have time to pretend that I’m posting for dinner (first day of class tonight), so I figured that I would do a little blurb on my dinner from pictures that I’ve taken in the past.
On the menu for tonight: Egg Sandwich & Roasted Carrots & Brussel Sprouts

This baby is packed with 1 fried egg, 1 slice of swiss cheese, 1 campari tomato, 2 slices sesame sprouted grain bread (pan-toasted with scant spread of butter w/olive oil), dried oregano, and mustard
Beside this beautiful creation you will spy one of my brussel sprouts, but here is the full view (pre cooking):
I simply toss the brussel sprouts and carrots with some olive oil, dried thyme, dried rosemary, minced garlic, and a bit a salt. Then I roast them in the oven on 400˚F for 20ish minutes.
Simple and (I assure you) delicious!
So, the time has come for me to actually make this so that I can be at school on time. After, I’m looking forward to the first meeting of a student organization that I’m involved with.
